“Rise & shine” is kind of tough when it’s the dead of winter and the sun doesn’t come up until 7:30am. I count it as a win if I can manage to get up in time to do a full workout before the sun rises — and a MAJOR win if I get to work early on top of that.

Overnight oats are easily one of life’s greatest mysteries. Think about it: oatmeal has been a #basic staple in the human diet for +/- a thousand years (I actually have been Googling “origins of oatmeal” for the last hour with no luck, so sorry to any oatmeal historians for misquoting facts here), and yet, some trendy geniuses found a way to make oatmeal hip and cool and yuppie again by throwing it in a mason jar. Hello and welcome! I’m excited to have you here reading my inaugural blog post. You can make your way over to my About page for the full story behind Yuppie Kitchen, but here’s the premise in a nutshell: I want to share easy, fun, healthy, affordable recipes with you. I’ll keep you looped in on my meal plans, grocery lists, recipe inspiration, etc to help you get into homemade dinners.
To kick things off, I’m starting with one of my favorite go-to weeknight meals – although shakshuka is more of a breakfast dish, I have a lot more time in the evenings (compared to me running out the door every work morning.)
